Recipe — Lemon and Coconut Protein Balls

This weekend I thought I'd try my hand at protein balls — something I've always wanted to try but never got around to. This recipe was one I haphazardly threw together as an experiment, but turned out a real success! (If I do say so myself…) They've gone down a storm in the office anyway.

I love these to be nice and zesty so I add quite a lot of lemon — feel free to tone this down. 

Ingredients
1 cup of cashew nuts
Zest of one lemon
Juice of half a lemon
1 scoop of vanilla protein powder
1/2 cup of desiccated coconut
Extra coconut for rolling
1 tablespoon of honey

Method
Add all of the ingredients to a food processor and blitz until it represents a fine crumb. Be sure not to blend the mixture too much — if it resembles butter then it won't form into balls!

Take a heaped tablespoon of the mixture and roll into a ball using your hands. Roll this in a little desiccated coconut, and pop in the fridge for an hour or so to set. And voila! Easy.
